Proprietor and Head Chef Sheldon Russell, was born and raised in Sheffield, England. In 1975, after working in some of Englands fine hotels, Sheldon took the opportunity to move to Canada to work in the kitchen of The Church Restaurant here in Stratford. In 1983, Sheldon and a partner opened up The Keystone Alley Cafe, which began as a coffee shop. Over the next 25 years, Sheldon and his wife, Patty Hawkins-Russell have evolved the coffee shop into the popular casual fine dining restaurant that you see today. While running the Keystone, Sheldon also returned to the Church restaurant for 10 years as co-owner and Chef de Cuisine in 1988. Sheldon attributes his success to a humble upbringing, hard work, his understanding of fine cuisine and the tradition of passing on that knowledge to the next generation of young chefs. We are excited to be involved with promoting the Field to Chef menu, allowing us to showcase the fine local produce of Perth County and the farmers that produce them. Field to
